The book , Oregon's Crabs was the first publication in the NW to stress the importance of backing and cleaning crabs as soon as possible to minimize exposure to contamination of the body meat by the marine toxin Domoic Acid or PSP.
We do not recommend consumption of crabs taken from water with an active outbreaks of Domoic Acid or PSP. The consumption of crab or shellfish contaminated with elevated levels of Domoic acid may result in the loss of your short term permanently or Death. The Consumption of crab or shellfish contaminated with PSP can result with Death.
We do recommend Checking the Shellfish Hotline for areas contaminated with Domoic Acid or PSP prior to harvesting marine species from those areas.
We recommend against harvesting crabs or shellfish from areas contaminated by Marine Toxins. We also recommend against purchasing cooked half-crab Crab Clusters because they are the harvest result of the State Sponsored scheme to market Dungeness crabs contaminated with Domoic Acid. To date the State has had to recall contaminated Dungeness crabs twice. This is our opinion. It is our opinion that the Oregon State guidelines are inadequate and fail to protect the Public Safety.
In today's environment it is important to back and clean the crabs immediately after being caught during periods with elevated Marine Toxins (We do not recommend consuming Dungeness crabs taken from Oregon State Waters during periods with elevated marine toxins).
Generally, according to Washington State guidelines, Dungeness crabs are safe to eat up to 2 hours after death. But in Today's environment the crab's powerful gastric fluids containing marine toxins can penetrate the body meat in the crab's honeycomb cartilage. This problem is minimized by cleaning the crabs and backing them as soon as they are caught. Of course, all of this is a moot point and unnecessary when the ocean water is free from marine toxins. Always check the Shellfish Hotline prior to crabbing or digging clams. Only consume crab that is taken when the ocean is free from marine toxins.
