How to vacuum pack fish (Beckman method) so it won't get freezer burn and will last longer than normal vacuum packing. Freeze your filet as pictured above.
In large bowl mix heaping spoon of non iodized salt and fill the bowl with water, mix well (Taste it should be close to sea water.) Not enough salt add a touch more.
Take the frozen fish filet and dip each one into the saltwater. Place the fish back into freezer and let it freeze again (10 min- 30 min). Now it is ready to vacuum pack.
How to thaw fish for the very best product. Open the frozen vacuum packed fish and remove from the package. Take the frozen fish and wrap in a cotton dish towel and place in the refrigerator to thaw over night. The towel removes any unwanted moisture and the final product is wonderful and fresh like the day it was caught.
The late Lance Beckman USFW research biologist showed me this method and it works.
